Pepper Cake

  1. Preheat oven to 375 F or 190 C.
  2. Butter and flour the baking form.
  3. Beat butter till light and fluffy, then cream with sugar. One by one add the eggs. Beat in the treacle, spices and orange zest. Measure the baking soda into a small bowl, add the vinegar and blend the fizzy mixture into the batter. Add flour and milk alternately, pour batter into the pan and bake 50-60 minutes.
  4. Remove and let cool on a rack. Make a glaze by warming orange marmalade, apricot jam and a bit of sugar in a small saucepan. Brush glaze over cooled Pepper Cake and decorate by pressing blanched almonds into the stickiness.

 

 And Voila!
